Hello Cookie Lovers,

Hope that you all are well.

Between baking cookies at home for my loved ones and dealing with non-sense anywhere, I take the former in a heartbeat anytime. Not everyone can afford to stay out of the never-ending rat race, but one should at least make time to recognize and appreciate sweet, simple things in life such as homemade cookies.

Take Kimberly Fiser for example. Kimberly is a lunch lady at Lee’s Summit School in Kansas City, Kansas. She baked, decorated her favorite cut-out cookies, and shared them with family and friends every Easter Sunday. Her secret in baking these cookies is that they have to taste as good as they look.

Dianne Smith of Gladstone, Kansas is another inspiring example. As a senior vice president of a bank, Dianne takes refuge from her hectic work schedule in cooking and baking sweets. Her homemade cookies scored highly in recent Kansas City Star’s cookie contests.

Kimberly and Dianne had their mother and grandmother, respectively, passed on the love of baking to them. A group of students at Pine Lake Middle School in Sammamish, Washington, have their culinary teacher, Ms. Gail Oseran, to thank for their baking skill.

Ms. Oseran’s generous students have been baking cookies and other sweets for the past five years to raise fund for the Issaquah Schools Foundation as a gesture of paying forward a good deed. This year, the students baked enough cookies to raise $2,400.

Tips on Creating a Recipe for Your Favorite Drop Cookies

  • Know the basic formula, as mentioned in Smart Cookies #22, but feel free to make variations.

  • Use your favorite add-ins to suit your taste.

  • Follow the following preparation steps:

    1. Preheat oven to the suggested temperature at least 15 minutes before baking the first batch.

    2. Sift dry ingredients together to distribute them evenly and eliminate any contamination.

    3. Cream room temperature butter with sugar. The mixture should be light in both color and texture.

    4. Beat eggs, one at a time, into the butter mixture, and mix until well blended.

    5. Add extracts if using.

    6. Combine dry ingredients with butter mixture. Gently stir just until all traces of flour mixture disappear.

    7. Fold in any add-ins such as nuts, dried fruits, chocolate chips, etc. These ingredients should be at room temperature for best result.

    8. Drop tablespoonfuls of dough at equal distances on baking sheets lined with parchment paper. Bake until golden brown. Remove and transfer cookies to wire racks to cool completely.

    9. Enjoy!

Just a reminder because I know that all chocolate and cookie lovers are well aware that today, May 15, is Nation Chocolate Chip Day for those of us who live in North America. I still think that there should be a Global Homemade Cookies Day, don’t you?
