Cornbread Whoopie Pies for Lunch!

Preheat oven to 375 degrees Fahrenheit and line baking sheets with parchment paper.
Sift together flour, cornmeal, brown sugar, baking soda, and salt. Set it aside for later use.
Beat together, in a separate bowl, buttermilk, butter, and egg on low speed until just combined. Increase speed and continue beating for another 3 minutes.
Add flour mixture and incorporate shredded cheddar cheese to form a soft, battery dough.
Drop tablespoonfuls of dough onto prepared baking sheet, spacing about 1 inch apart.
Bake for about 12 minutes or until they begin to brown around the edges. Remove and let whoopie cakes cool on baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
