Cornbread Whoopie Pies for Lunch!

Ingredients for cornbread whoopie pies:

All purpose flour 1¼ cup
Cornmeal 1 cup
Brown sugar, packed ¼ cup
Baking powder 2 tsp
Salt 1 tsp
Buttermilk, rm temp. 1 cup
Unsalted butter, rm temp. ¼ cup
Egg 1 large
Cheddar cheese, shredded 1 cup

  • Preheat oven to 375 degrees Fahrenheit and line baking sheets with parchment paper.

  • Sift together flour, cornmeal, brown sugar, baking soda, and salt. Set it aside for later use.

  • Beat together, in a separate bowl, buttermilk, butter, and egg on low speed until just combined. Increase speed and continue beating for another 3 minutes.

  • Add flour mixture and incorporate shredded cheddar cheese to form a soft, battery dough.

  • Drop tablespoonfuls of dough onto prepared baking sheet, spacing about 1 inch apart.

  • Bake for about 12 minutes or until they begin to brown around the edges. Remove and let whoopie cakes cool on baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
