Yummy Yam Crackers
Quick and easy to make, yam crackers have a unique flavor with a hint of cinnamon. I can’t find them in any stores in my area. Can you in yours? They go perfectly well with your favorite cheese. This recipe yields about 50 yummy crackers.

Bake yam or sweet potato at 425 degree F. until you can push a knife blade easily into it.

Cut baked yam or sweet potato into small pieces, then puree them with 1 or 2 tablespoons of water. Measure out 1 cup of pureed yam, and save the rest for another use.
Preheat oven to 325 degrees Fahrenheit and line baking sheets with parchment paper.
Combine flour, salt, cinnamon, and sugar in a large bowl. Then, work softened butter into flour mixture until it resembles coarse meal. It’s always easy for me to this step using my fingers.
Blend in pureed yam and gather dough into a ball. For easy rolling, wrap dough in plastic or wax paper and refrigerate it for about ½ hour.
Divide dough into 2 equal portions for rolling. On a floured surface, roll dough out to about 1/8-inch thick.
Cut dough into 2-inch by 3-inch rectangles using a sharp knife. Transfer them to prepared baking sheets, and prick each one with the tines of a fork.
Bake for about 20 minutes on 1 side, then turn and continue baking for another 5 – 10 minutes or until yam crackers are golden browned. Remove any crackers that are brown before the others. Don’t overbake them. Cool on racks.
