Quick recipes make impulse baking so easy. The most difficult and time-consuming part about the following bar cookie recipe is accurately measuring ingredients.

These delicious oatmeal chocolate chip bars were part of my provisions for a day trip to Central Park in early March 2012. How often can anyone afford such luxury?

Therefore, let me first take this opportunity to share with you a few photos that I took on that gorgeous day.

Thanks to a repertoire of quick recipes, I didn’t have to labor laboriously by the stoves to prepare for the sweet treats. Start out with the following ingredients,

Margarine, softened ½ cup
Granulated sugar 1/3 cup
Light brown sugar 1/3 cup
Egg 1 large
Smooth peanut butter 1/3 cup
Vanilla extract ½ tsp
All purpose flour ¼ cup
Whole-wheat flour ½ cup
wheat germ ¼ cup
Rolled oats 1 cup
Baking soda ½ tsp
Salt ¼ tsp
Semi-sweet chocolate chips 6 oz.



  • Preheat oven to 350 degrees F., and line an 8-inch square baking pan with aluminum foil.

  • Whisk together flours, wheat germ, oats, baking soda in another bowl. Set aside for later use.

  • Beat softened margarine with sugars on medium speed until smooth. Add egg, peanut butter, and vanilla extract. Continue beating until well blended.

  • Add the flour mixture and stir manually to combine. Stir in chocolate chips.

  • Spread dough evenly in the prepared baking pan. Bake until golden brown or about 25 minutes.

  • Lift the whole bar out of its baking pan while holding on to the extended aluminum foil. Cool on wire rack for about 10 minutes before cutting into small squares. Remove them from the aluminum foil and let them cool completely on wire racks before serving or packing for the trip.
