Simply Peanut Butter Bars
These peanut butter bars are hardy and great to take on any road trip. They are easy to make, travel and freeze very well for long keeping.
Preheat your oven to 350 degrees Fahrenheit, and have a 9x13x2-inch non-stick baking pan available.
Toast peanuts in the preheated oven until golden brown, about 5 – 8 minutes. Cool to room temperature before chopping them to ΒΌ-inch pieces.
Cream peanut butter and brown sugar together thoroughly. Then add eggs and vanilla extract. Blend them all together very well.
Combine chopped peanuts and semi-sweet chocolate into the mixture thoroughly.

Transfer the mixture to the baking pan, pressing it onto the bottom of the pan and into the corners and sides to create an even layer.
Bake on the center rack for about 20 minutes, until the center is set.
Remove peanut butter bars from oven and cool to room temperature completely before cutting into your preferred shapes and sizes.
