Oat Bran Cookies

The grainy look of oat bran cookies is attributable to oat bran cereal, which is not the same as oatmeal, or wheat germ, or all-bran. It has a light and powdery texture, and you should be able to find it in the hot cereal section.

Besides adding fiber to your homemade cookies, oat bran is also responsible for their crunchiness. By the way, your cookies may look grainy, but don’t taste grainy at all. Here are the rest of the ingredients:

All purpose flour ½ cup
Whole-Wheat flour ½ cup
Oat bran cereal 1 ½ cups
Baking powder ¾ tsp
Baking soda ¼ tsp
Salt ½ tsp
Unsalted butter ½ cup
Peanut butter, smooth ½ cup
Granulated sugar 2/3 cup
Egg 1 large
Vanilla extract 1 tsp

  • Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.

  • Combine flours, oat bran, baking powder, baking soda, and salt.

  • Microwave or heat butter and peanut butter on high for about 1 minute, or until butter is melted. Stir until the mixture is smooth.

  • Beat in sugar, egg, vanilla extract until well combined and smooth.

  • Add flour mixture and continue stirring until well combined.

  • Drop tablespoonfuls of dough on prepared cookie sheets, press with a fork to make a crisscross pattern.

  • Bake for 15 – 18 minutes, or until bottom edges are brown. They’re done when you press on them and feel just a little resistance. Cool oat bran cookies on baking sheets, and of course, store them in air tight containers.
