Fried Love Knots
Italian love knots accentuate the greatness of simple flavor, basic ingredients and easy preparation. As any fried homemade cookies, they are best prepared and served on the same day. To experiment a different flavor, you can substitute orange zest for lemon.
Put flour in a bowl and mix in softened butter. I prefer to do this step by hand.
Add sugar, eggs, egg yolks, salt, lemon zest, and rum to the flour. Work all ingredients to form dough. Add a little water if the dough is too dry.
Place dough on a floured surface and knead well for 10 minutes. Then cover dough and allow it to rest in a cool place for 1 hour.
Heat at least 3 – 4″ of oil to 350 degrees F.
Divide dough into fourths. On a floured surface, roll out one quarter of dough to about 1/6″ thick, cut into strips about 4″x½”.
Tie each strip into a simple, loose knot. Repeat with the other 3 quarters.
Fry the knots, 4 or 5 at a time until puffed up and golden (about 1-2 minutes.)
Remove and drain on paper towels.
Sprinkle with sifted confectioners’ sugar before serving if desired. I drizzle honey over these love knots instead.
