Melt chocolate chips with light corn syrup and butter in a saucepan over low heat, stirring with a wooden spoon until melted and smooth.
Remove from heat and stir in peppermint extract. Then gently stir in rice cereal until the cereal is evenly coated with chocolate.
Immediately turn the chocolate-coated cereal out onto a large piece of wax or parchment paper. Shape the mixture into a 12x6-inch rectangle. Refrigerate for about 20 minutes or until slightly firm.
Cut cereal mixture using different sizes of heart-shaped cookie cutters. Chill chocolate heart cookies again until firm, then wrap each cookie in plastic wrap if desired.
