Vanilla Wafers

Baked and served in less than 20 minutes, these simple vanilla wafers with unforgettable buttery taste are perfect complement to a scoop of vanilla ice cream. The presence of cake flour adds extra tenderness.

Unsalted butter, softened¼ cup
granulated sugar6 Tbsp
Egg yolks2 large
Vanilla extract1 Tbsp
All purpose flour6 Tbsp
Cake flour¼ cup
Baking powder½ tsp
A pinch of salt

Before adding flour

  • Preheat oven to 400 degrees Fahrenheit and line a cookie sheet with parchment paper.


  • Cream softened butter and sugar together on medium-high speed until light and fluffy.


  • Mix in egg yolk, one at a time. Add vanilla extract.


  • Stir in flours (both cake and all-purpose), baking powder and salt until just combined.

    Ready for baking
  • Drop rounded teaspoonfuls of dough onto prepared cookie sheet, spacing about 1½ apart.

  • Bake for about 5-7 minutes or until edges are browned and tops are firm to touch.

  • Vanilla wafers Transfer the entire parchment paper with wafers on it to a wire rack to cool completely before attempting to remove the cookies.

    This recipe makes about 20 delicious homemade vanilla wafers.
