Vanilla Wafers
Baked and served in less than 20 minutes, these simple vanilla wafers with unforgettable buttery taste are perfect complement to a scoop of vanilla ice cream. The presence of cake flour adds extra tenderness. Preheat oven to 400 degrees Fahrenheit and line a cookie sheet with parchment paper.
Cream softened butter and sugar together on medium-high speed until light and fluffy.
Mix in egg yolk, one at a time. Add vanilla extract.
Stir in flours (both cake and all-purpose), baking powder and salt until just combined.
Drop rounded teaspoonfuls of dough onto prepared cookie sheet, spacing about 1½ apart.Bake for about 5-7 minutes or until edges are browned and tops are firm to touch.
