Rainbow Cookies

Homemade rainbow cookies are colorful, eye-pleasing, and delicious. They add a cheery note to any plate of sweet goods.

Actually, you can call them by any name that you fancy. Other suggestions would be Viennese squares, Italian bars, black topped triple-deck cookies, etc.

Homemade rainbow cookies

Rainbow cookies take very little time to make. They serve well at parties. Make them ahead, keep them refrigerated and their flavor seems to get better with age.

Eggs, separated 4 large
Granulated sugar ½ cup
Unsalted butter, rm. temp 1 cup
Almond filling, a 12½-ounce can
Almond extract 1 tsp
All purpose flour 2 cups
Salt ½ tsp
Red, green food coloring
Chocolate chips,
as much as you like



  • Preheat oven to 350 degrees Fahrenheit.

  • Slightly grease 3 baking pans, 13x9x2, then line them with parchment paper and grease top of paper.

    Stiff peaks

  • Beat egg whites to a stiff peak, then set aside for later use.

  • Cream almond filling, sugar, and butter together well. Then add egg yolks and almond extract. Continue beating until the mixture is fluffy.

  • Gradually blend in flour and salt to form dough.

  • Gently stir in stiffened egg whites.


    Liquid

  • When whipped egg whites have been sitting for a while, some liquid will likely accumulate at the bottom of the bowl. Do not add this liquid to the mixture.


    Tri-colored Dough
  • Divide dough into 3 equal parts. Add a few drops of red food coloring to one part, a few drops of green food coloring to another, and leave the third part as is.
  • Mix the color in well before spreading dough evenly into three prepared baking pans.


  • Bake between 15 – 20 minutes or until edges are lightly browned.

  • Cool completely before assembling rainbow cookies as followed:

    1. Spread jelly or jam of your choice to one side of either red or green cookie layer, place the white cookie layer on top, spread some more jelly or jam on top of the white layer, top off with the other colored cookie layer.

    2. Cut the assembled cookies into strips of about 1-inch wide.

    3. Melt enough chocolate chips in a double boiler. Spread melted chocolate over these strips to cover top and all sides.

    4. Cool completely before cutting each strip of stacked cookies with chocolate topping into squares.
