Pistachio-Flavored Pudding Cookies


There are as many flavors for pudding cookies as there are for pudding mix. So let the children experiment with different flavors. I use pistachio flavored pudding mix because it yield cookies of my favorite color.

Ingredients for pudding cookies


Instant vanilla pudding mix1 package (3.4 oz.)
Baking powder2 tsp
All purpose flour1 cup
Unsalted butter, softened½ cup
Granulated sugar¼ cup
Eggs2 large

  • Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.

    Creaming butter and sugar

  • Combine pudding mix, baking powder, and flour in a bowl and set aside for later use.

  • Cream softened butter and sugar together until thoroughly combined or for about 5 minutes. Add eggs and beat for 3 more minutes.

    Ready for baking
  • Gradually stir the dry ingredients into butter and sugar mixture. Drop dough by tablespoonfuls onto prepared cookie sheets.

  • Beat softened butter and sugar until creamy, beat in ground nuts. Gradually add flour, blending thoroughly.

    Pudding cookies
  • Bake for about 10 to 12 minutes or until edges are golden brown. Let pudding cookies cool on baking sheets for a couple of minutes before transferring them to wire racks to cool completely.
