Sweet Popovers

Popovers are the easiest thing to bake. The only skill you need is knowing how to whip egg whites to the right texture. Consisted of only three ingredients, they are a perfect low fat breakfast item to go with your favorite jam.

Wrap any leftover in aluminum foil to preserve their crusty exterior.

Eggs9 large
Vegetable oil1 cup
All purpose flour2 cups



Batter for popovers

  • Preheat oven to 375 degrees Fahrenheit, and grease or spray a mini muffin pan with nonstick spray.

  • Whisk eggs and oil on high speed.

  • Gradually add flour while still whipping on low speed. Turn on high speed and whip for 5 more minutes to produce a thick, smooth batter.

    Ready for baking
  • Carefully fill each mini muffin cup with batter. Bake for 15 - 20 minutes or until golden brown.

  • Popovers Remove these low fat, non-traditional breakfast cookies from muffin pan and cool them on wire racks. Frost them with lemon icing if preferred.

    This recipe will make about 30 fluffy, airy, crusty popovers. Enjoy!
