No Bake Peanut Butter Balls


No bake peanut butter balls were the perfect answer to my dilemma.

I was supposed to bring a homemade dessert to a birthday party once on a very short notice. I searched high and low for a quick and easy cookie recipe.

I finally came across two recipes for these no bake cookies, but didn’t quite like either one of them. Naturally, I decided to put together my own recipe for no bake peanut butter balls by selectively combining the best ingredients from both. Here they are:

Corn flakes, unfrosted2 cups
Confectioners’ sugar2/3 cup
Unsalted butter, softened¼ cup or ½ stick
Smooth or chunky peanut butter2/3 cup
Semisweet chocolate, coarsely chopped5 oz
Vegetable oil1 tsp
Unsalted, roasted peanuts, finely chopped1 cup

  • Line a cookie sheet with parchment paper.

  • Crumble corn flakes into smaller pieces.

  • Thoroughly combine crumbled corn flakes, confectioners’ sugar, softened butter, and peanut butter using a wooden spoon or your clean fingers.

  • Shape peanut butter mix into approximately 1-inch balls and place them on prepared cookie sheet.

  • Place about ¼ cup of chopped peanuts in a flat dish.

  • Bring some water to a simmer in a saucepan over medium heat.

  • Combine semisweet chocolate and vegetable oil in a heat proof bowl, and position it over this saucepan. Make sure that bottom of bowl does not touch the water.

  • Stir constantly to slowly melt the chocolate.

  • Remove chocolate from heat, but keep bowl over pot of water.

  • Using two forks, dip one ball at a time in the melted chocolate. Remove excess chocolate.

  • Transfer chocolate coated peanut butter balls to the dish containing chopped peanuts, and coat it evenly.

  • Return it to cookie sheet. Repeat with the remaining cookies, adding peanuts as needed.

    If chocolate begins to thicken, repeat the heating procedure.

You can either air dry these no bake peanut butter balls or refrigerate them.


This recipe makes about 15 peanut butter balls. To creat another variety, do not coat them with chopped peanuts.


If refrigerated, they are good for up to 3 weeks. You can also freeze them for longer keeping. These irresistible no bake peanut butter balls are good contenders for mailing.
