No Bake Brownies

No bake brownies make it so easy for cookie and chocolate lovers to enjoy one of life’s greatest eating pleasures. As always, you can modify this recipe to suit your taste. Use any nuts of your choice or a different flavor for extract. Peppermint, brandy, rum, orange, maple, etc. will work just fine. A touch of cinnamon or a dash of red pepper will intensify the already addictive chocolate flavor.

These brownies are fudgy, chewy, and of course, chocolaty!

Ingredients for no bake brownies

Chocolate graham crackers, finely crushed2½ cups
Miniature marshmallow2 cups
Walnuts or pecans, toasted and chopped1 cup
Semisweet chocolate chips1 cups
Canned evaporated milk1 cup
Light corn syrup½ cup
Salt¼ tsp
Unsalted butter1 Tbsp
Vanilla extract2 Tbsp

Mixture of milk, corn syrup, chocolate chips, and salt

  • Line a 9x9x2-inch baking pan with aluminum foil and set it aside. However, any reasonable sized pan will do because no baking is involved.

  • Mix together chocolate graham cracker crumbs, marshmallow, and nuts; set aside.

    Thickening chocolate mixture
  • Combine chocolate chips, evaporated milk, corn syrup, and salt in a sauce pan. Stir over low heat until chocolate is melted. Turn up the heat and bring the mixture to a full boil. Continue boiling for about 7 - 10 minutes while stirring constantly. The longer the mixture is boiling, the thicker it will become. Remove from heat and stir in butter and vanilla extract until blended.

    Mixing no bake brownies
  • Immediately stir chocolate mixture into the dry ingredients, mixing until well blended. Spread evenly in prepared pan, pressing down and smoothing the surface with a piece of wax paper if necessary.

    No bake brownies
  • Refrigerate until set, about 3 hours. Cut into bars of any shapes and sizes, and store them in covered containers between layers of wax paper. The challenge is, "how long can you keep these moist and irresistible no bake brownies in a covered container?":)
