Flourless Marzipan Cookies
for homemade marzipan
Preheat your oven to 350 degrees Fahrenheit, and line cookie sheets with parchment paper.
Mix all ingredients together on low speed for about 3 minutes.
Drop this mixture by teaspoonfuls on prepared cookie sheets, spacing about an inch apart.
Bake for about 15 minutes or until cookies are golden. Transfer them to wire racks to cool. This recipe makes about 3 dozens cookies.
Tip on grating lemon zest – I cover the grater with a piece of plastic so that the zest stays on the plastic wrap. It is easy to remove the zest from the grater later.
