Chewy Pistachio Lemon Drops


Nothing could be more refreshing than chewing on these lemon drops while sipping a cold glass of freshly squeezed lime or lemon juice. Here are all you need to make them:

Egg white1 large
A pinch of salt
Pistachios, finely chopped1 cup
Light brown sugar, firmly packed½ cup
All purpose flour1 Tbsp
Fresh lime or lemon juice½ tsp

  • Preheat oven to 325 degrees Fahrenheit and line cookie sheets with parchment paper.

  • Beat egg white and salt to a stiff peak.

  • Mix in ground pistachios and brown sugar, followed by flour and fresh lime or lemon juice.

    Portioning dough before baking
  • Drop dough by tablespoonfuls onto prepared cookie sheets, spacing about 1-in apart.

    Pistachio lime or lemon drops
  • Bake for 10 – 15 minutes or until edges are golden. Cool on baking sheets for a couple of minutes before transferring to wire racks to cool completely.

    This recipe yields about a dozen deliciously chewy lime or lemon drops.
