Chewy Pistachio Lemon Drops
Nothing could be more refreshing than chewing on these lemon drops while sipping a cold glass of freshly squeezed lime or lemon juice. Here are all you need to make them:
Preheat oven to 325 degrees Fahrenheit and line cookie sheets with parchment paper.Beat egg white and salt to a stiff peak. Mix in ground pistachios and brown sugar, followed by flour and fresh lime or lemon juice.
Drop dough by tablespoonfuls onto prepared cookie sheets, spacing about 1-in apart.
Bake for 10 – 15 minutes or until edges are golden. Cool on baking sheets for a couple of minutes before transferring to wire racks to cool completely.This recipe yields about a dozen deliciously chewy lime or lemon drops.
