No-Bake Granola Squares

Making granola squares using a microwave? I was truly skeptical, but tried it anyway.
I am pleased to report that these squares are delicious.

Tip: generously grease a microwavable dish or you will have difficulty removing the squares. You may find it helpful to refrigerate the entire bar before cutting it into squares.

Chocolate granola squares

Unsalted butter, softened½ cup
Light or dark brown sugar,¼ cup
firmly packed
Egg1 large
Vanilla extract½ tsp
Quick oats, uncooked1 cup
All purpose flour½ cup
Baking soda½ tsp
Ground cinnamon½ tsp
A pinch of salt
semisweet chocolate chips1 cup
Raisins½ cup

Some ingredients for granola squares

  • Beat softened butter, brown sugar, egg, and vanilla extract until light and fluffy.

  • Stir in quick oats, flour, baking soda, ground cinnamon, and salt. Then add raisins and ½ cup chocolate chips.

    Ready for the microwave

  • Spread into well-greased 8-inch square microwavable dish, and microwave on high (100% power) for 4 minutes or until a toothpick comes out clean.

If your microwave does not have a turntable, then rotate dish after 2 minutes.

    Spreading chocolate on top

  • Remove from the microwave and immediately sprinkle with the remaining ½ cup of chocolate chips. Spread the melting chips to evenly cover the entire bar.

  • Cool completely in microwavable dish or refrigerate it before cutting into squares.

Warning: you may find yourself making these delicious chocolate granola squares more often than you expect because of how easy it is to do.
