Granola Bars

A mixture for granola bars is a blank canvas waiting for your creativity. I added dried apricots and toasted walnuts, but any combination of dried fruits and nuts is acceptable.

Egg1 large
Light brown sugar, firmly packed½ cup
Vegetable oil1 Tbsp
Ground cinnamon½ tsp
Vanilla extract½ tsp
A pinch of salt
Rolled (old-fashioned) oats¾ cup
All purpose flour2 Tbsp
Dried apricots, coarsely chopped½ cup
Chopped walnuts¼ cup

Partial list of ingredients

  • Preheat oven to 325 degrees Fahrenheit. Grease or line an 8-inch square baking pan with parchment paper.



  • Using an electric mixer, combine egg, brown sugar, vegetable oil, cinnamon, and salt together on medium-low speed.



  • Add oats, flour, chopped apricots, chopped walnuts, and mix together until evenly moistened.

  • Ready for baking Transfer the batter to prepared pan and spread it to cover the pan evenly.

  • Bake for about 25 minutes or until golden. Let granola bars cool completely in baking pan on a wire rack before removing or cutting.
