Mexican Date Cookies

This recipe for date cookies shows me a delicious way to enjoy coffee as I am not a coffee drinker. Otherwise known as Galletas de Datil, these homemade cookies are popular Mexican sweet.

Ingredients for Mexican date cookies

Unsalted butter, softened½ cup
Brown sugar, firmly packed1/3 cup
Granulated sugar¼ cup
Egg1 large
All purpose flour1½ cups
Baking soda½ tsp
Cinnamon½ tsp
Cloves½ tsp
Brewed coffee½ cup
Dates, chopped1 cup

  • Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.

  • Cream butter and sugars, both brown and granulated, until fluffy. Add egg and mix well. Sift flour, baking soda, cinnamon and cloves together. Add them to the creamed mixture.

    Just before baking

  • Add brewed coffee and chopped dates. Drop dough by tablespoons on prepared cookie sheets.

  • Bake for about 10 to 15 minutes. Unlike other drop cookies, date cookies will hardly turn golden brown. As usual, let them cool on baking sheets for a couple of minutes before transferring to wire racks to cool completely. The yield depends on the size of your drops.
