Mexican Date Cookies
This recipe for date cookies shows me a delicious way to enjoy coffee as I am not a coffee drinker. Otherwise known as Galletas de Datil, these homemade cookies are popular Mexican sweet.

- Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
- Cream butter and sugars, both brown and granulated, until fluffy. Add egg and mix well. Sift flour, baking soda, cinnamon and cloves together. Add them to the creamed mixture.

- Add brewed coffee and chopped dates. Drop dough by tablespoons on prepared cookie sheets.

- Bake for about 10 to 15 minutes. Unlike other drop cookies, date cookies will hardly turn golden brown. As usual, let them cool on baking sheets for a couple of minutes before transferring to wire racks to cool completely. The yield depends on the size of your drops.
