Chocolate Meringues
Ingredients for sweet chocolate meringues are:
Combine sugar, water, and corn syrup in a sauce pan and bring to a boil over medium heat. Stirring often to dissolve the sugar.As soon as syrup starts to boil, whip egg whites to soft peak.
Remove syrup from heat when its temperature reaches 250 degrees Fahrenheit.Carefully and slowly pour the 250 degrees Fahrenheit syrup into the whisked egg whites. Continue to whisk for about 5 minutes on medium speed until the meringue is very thick.Quickly fold chopped walnuts and chocolate morsels into the meringue, creating a variegated mixture.
Drop heaping tablespoons of mixture onto wax or parchment paper. Let chocolate meringues cool for at least an hour before refrigerating.
