Chocolate Meringues


Ingredients for sweet chocolate meringues are:

Granulated sugar2 cups
Water½ cup
Light corn syrup1/3 cup
Egg white2 large
Walnuts, 1 cup
toasted and finely chopped
Semisweet mini chocolate morsels½ cup



Whipping egg whites to soft peak

  • Combine sugar, water, and corn syrup in a sauce pan and bring to a boil over medium heat. Stirring often to dissolve the sugar.

  • As soon as syrup starts to boil, whip egg whites to soft peak.

  • Remove syrup from heat when its temperature reaches 250 degrees Fahrenheit.

  • Carefully and slowly pour the 250 degrees Fahrenheit syrup into the whisked egg whites.

  • Continue to whisk for about 5 minutes on medium speed until the meringue is very thick.

  • Quickly fold chopped walnuts and chocolate morsels into the meringue, creating a variegated mixture.

    Portioning chocolate meringues

  • Drop heaping tablespoons of mixture onto wax or parchment paper. Let chocolate meringues cool for at least an hour before refrigerating.
