Homemade Candied Peel

As an add-in ingredient, candied peel is gaining popularity in the homemade cookie community. It provides an interesting tangy texture and a festive look. Here’s how you can make it at home.

ingredients for candied peel



Oranges, lemons, limes4 - 6
Granulated sugar, sifted½ cup
Water½ cup
Extra fine sugar for coating¼ cup


Simmering



  • Peel the skin from citrus fruits using either a vegetable peel or a very sharp knife. Make sure not to peel away the bitter white pith. Then finely slice the peels into julienne strips and set aside.



  • Combine sugar with water and bring to a boil. Continue stirring and boiling until all the sugar dissolves. It shouldn't take a long time.



  • Add julienne strips of peel, reduce heat and simmer until most of the water is gone.

    Candied Peel

  • Transfer the peel to a paper towel to cool.

  • Sprinkle fine sugar over cool candied peels. Toss well to allow sugar to coat them thoroughly.

    Let peels dry completely before putting away or adding to your favorite cookie recipe. They will keep for several months.
