Cranberry Butter Cookies

The presence of dried fruits in these butter cookies creates a delicate but interesting bite and flavor. Dried cranberries, cherries, even blueberries add color and texture to an otherwise blank and rather dull canvas. Wouldn't you agree?

Granulated sugar¼ cup
Eggs1 large
Vanilla extract1 tsp
All purpose flour½ cup
A pinch of Salt
Dried cranberries½ cup
Soak in water for 2-3 hours, drain well

Preparing dough for cranberry butter cookies

  • Preheat oven to 350 degrees F. and line a cookie sheet with parchment paper.

  • Cream softened butter and sugar until well combined, light and fluffy. Add egg, vanilla extract, and continue beating thoroughly.

Ready to incorporate flour and cranberries
  • Gently fold in flour and salt until just combined. Do not over-mix. Then blend in the well-drained cranberries.

  • Drop dough by rounded teaspoonfuls onto prepared cookie sheet, spacing about 2 inches apart.
