Cranberry Butter Cookies
The presence of dried fruits in these butter cookies creates a delicate but interesting bite and flavor. Dried cranberries, cherries, even blueberries add color and texture to an otherwise blank and rather dull canvas. Wouldn't you agree?
Preheat oven to 350 degrees F. and line a cookie sheet with parchment paper .
Cream softened butter and sugar until well combined, light and fluffy. Add egg, vanilla extract, and continue beating thoroughly.
Gently fold in flour and salt until just combined. Do not over-mix. Then blend in the well-drained cranberries.
Drop dough by rounded teaspoonfuls onto prepared cookie sheet, spacing about 2 inches apart.
Bake for about 10 minutes, or until edges are browned and tops are still pale white but firm to touch.
Let cookies firm up on baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
This recipe yields about a dozen soft, full-of-flavor homemade cranberry butter cookies .
